Cooking Greek salad for the winter:

Step 1: Prepare the beans.

Before you start cooking beans should be prepared. To do this, rinse it and place it in a basin filled with cool water. Soak the beans all night. Important: need to change water every 3-4 hours.
Drain the soaked beans and transfer them to a large pot, fill with clean water and start cooking. You need to boil until half cooked, approximately 30-40 minutes. In this case, after the liquid boils for the first time, it must be drained and the beans filled with a new portion of water. After the specified time, remove the pan from the heat and drain the liquid brew in which the beans were cooked.

Step 2: Prepare the pepper.

Rinse sweet pepper under a stream of warm water, cut out the core with seeds and chop in any way convenient for you. Just try to make the pieces not very large and not interfere in the finished dish, but complement it.

Step 3: Prepare the tomatoes.

Rinse the tomatoes properly. You can peel them, or chop them right. If you decide to peel, then on each tomato make a small cut from the bottom and dip the vegetables in boiling water. After this procedure, the skin will easily lag behind the pulp of a tomato.
And if you decide to be too lazy, like me, and leave the tomatoes with the peel, then just cut out the place where the tail used to be and pass the vegetables through the meat grinder.

Step 4: Prepare the carrots.

Using a special knife for peeling vegetables, remove peel from carrots, then rinse thoroughly under running water. Grind clean vegetables with straws or grate on a coarse grater.

Step 5: Prepare the onion.

Peel the bulbs and cut off the excess ponytails. For this dish, it is best to chop the onions finely, but if you wish, you can just grate it, in which case it will only be slightly felt in the finished salad.

Step 6: Prepare the garlic.

Dismantle the head of garlic into the cloves and peel them. Peeled garlic heads through a meat grinder in the same way as tomatoes.

Step 7: Prepare Hot Peppers.

When working with hot pepper it is better to use gloves, as it can cause irritation on the skin. Remove seeds and ponytails from pepper, and then finely chop the pods, you can also use a meat grinder.

Step 8: Prepare the parsley.

Rinse parsley and shake off excess moisture. After finely chop the leaves.

Step 9: Cook the roast.

Heat a small amount of vegetable oil in a pan and fry the onions and carrots in it. Fry vegetables for 10 minutesthen add the bell peppers to them and continue cooking 5-7 minutes.

Step 10: Cooking the Appetizer

Now in a pan with half-boiled beans, add all the prepared ingredients, including vegetable frying, garlic, parsley and hot pepper. Add the right amount of salt, vinegar and oil, bring to a boil, stirring all the time, then cook the future workpiece over low heat 20-25 minutes.

Step 11: Preserve the salad.

Prepare the jars in any way convenient for you: steamed, in the oven or in another way. Pour the prepared salad into sterilized jars and tighten the lids. And then everything is exactly the same as in the manufacture of most other blanks: turn the container upside down and wrap it with a towel, wait until it cools completely, return it to its original position and store the preservation in a dry and dark place.

Step 12: Serve a Greek salad for the winter.

So the long-awaited day came when you decided to open a jar of prepared salad. But how to file it? You can simply put it on the table as an independent dish, you can use it as a cold or hot side dish, or you can even make a salad dressing for soup out of salad.
