Cooking cottage cheese pancakes from homemade cottage cheese:

Step 1: prepare the curd dough.


So, if you have home-made cottage cheese purchased or prepared on your own, preferably of medium fat content, not watery, even a little dry, then you can proceed. We shift it into a deep bowl and knead with a table fork to the state of crumbs.

Then we add sugar, raw chicken egg, a little salt to this dairy product and grind everything until a homogeneous consistency. Then, using a sieve with a fine mesh, we begin to sift wheat flour into the resulting mass. Do not rush, add it slowly, in half a glass, while kneading a thick, slightly sticky and rather dense dough. If the semi-finished product turned out to be liquid, it is most likely that not all the whey is cooked from the curd glass, in this case more flour will be needed, otherwise we will get pancakes instead of cheesecakes.

We don’t mix it for a long time and stubbornly, these ingredients do not like this, so as soon as the structure of the dough reaches the desired consistency, put on the table top all the other products that are needed to prepare the dish, and immediately proceed to the next, almost final step.

Step 2: form and fry the cottage cheese pancakes from home-made cottage cheese.


We chop the chopping board with wheat flour and send the curd mixture to it. We roll it up with a sausage with a diameter of 5-6 centimeters and divide it with a sharp kitchen knife across into equal layers up to 2-2.5 centimeters thick. Then with clean palms we give the cakes a more round shape and roll them in the next portion of flour.

At the same time, put the pan on a small fire and send two types of oil into it: butter, and vegetable, let them warm up. After a few minutes, put the cheese cakes into hot fat and fry them on both sides until golden brown, about 3 minutes each.

As soon as they are browned, reduce the heat to a minimum, cover the pan with a lid and let the fragrant dish steam for one to two minutes. Then we remove the lid and keep the rounds on the stove still 20-30 seconds, periodically turning over.

Then, using a kitchen spatula, we shift them onto a large flat dish or distribute them in portions on plates and immediately serve to the table.

Step 3: serve cottage cheese pancakes.


Cheesecakes made from home-made cottage cheese are served hot or warm on a large dish or in portions on plates as a dessert or a full hearty, but at the same time light breakfast, as well as dinner. You can serve them in different ways, for example, pouring honey, jam, condensed milk, greasing with sour cream, cream or thick yogurt or just sprinkling with powdered sugar.

A very good addition to this yummy will be fresh berries and fruits, cut into small pieces, milk-based sauces, favorite creams, but it all depends on your desire. Cook with pleasure and enjoy!

- some housewives add a little crushed dried fruits or dried berries to the curd mixture: dried apricots, prunes, raisins, strawberries, bananas and others;

- to give the usual cheesecakes a more exotic flavor, it is enough to put a little citrus zest, vanilla sugar or fruit or berry essences in the curd;

- if the syrniki turned out to be too fat, first transfer them to a paper kitchen towel, let them absorb all the excess oil, and only after that serve.
