Fried fish in batter

Ingredients for cooking fried fish in batter

A tablespoon - 2 pieces, a kitchen knife, a cutting board, paper kitchen towels, a deep plate - 2 pieces, a sieve with a fine mesh, a table fork - 2 pieces, a stove, a frying pan with a lid, a wooden kitchen spatula, a large flat dish or a serving plate.

Cooking fried fish in batter:

Step 1: prepare the fish.

To prepare this delicious simple dish, any boneless fresh or frozen fish is suitable. In our case, this is peeled pangasius, which is covered with a thin layer of ice, so we put its fillet in a bowl with ordinary cold running water and leave it alone until it thaws, it will take about 30-40 minutes.

Then we rinse the fish with paper towels, put it on a cutting board and use a sharp kitchen knife to divide each filet into portions, the amount of which depends only on your desire, you can simply cut each half of the carcass across into 2 parts or chop it into slices from 3 to 5 centimeters. When the issue of size is resolved, transfer the pangasius into a small bowl, sprinkle with salt and black pepper to taste. Mix thoroughly and let the fish soak in the aroma of spices for 10-15 minutes.

Step 2: prepare the batter.

Meanwhile, with a fine mesh sieve, we sift all the wheat flour into a deep plate. Then we separate 3-4 tablespoons from it, which we immediately transfer to a separate clean dish. We add mayonnaise, a raw chicken egg, a little salt and ground black pepper there, while not forgetting that these spices have already been used, so you should not be very zealous with them. Then we mix these products with a table fork until a state of a homogeneous semi-thick dough, like a pancake, put the remaining ingredients on the countertop, which will be needed to prepare the dish, and proceed to the next step.

Step 3: fry the fish in batter.

After 10-15 minutes, put on a medium heat a pan with about a couple of tablespoons of vegetable oil. While it is warming up, roll the pickled pieces of pangasius on all sides in wheat flour and dip in a bowl with batter, so that they are completely dipped in a semi-thick dough. Then very carefully spread the fish in a hot pan and fry it on one side until golden brown for about 2-3 minutes.

As soon as the pangasius is browned, with the help of a kitchen spatula we shift it to the other side, cover it with a lid and cook another 3-5 minutesbut over low heat!

Then we move the fish to a paper towel, previously spread out on the countertop, and give it the opportunity to absorb the excess fat. After that, put the tidbits on a large flat dish or distribute them in portions on plates and immediately serve on the table.

Step 4: serve the fried fish in batter.

Fried fish in batter served cold, warm or hot as a main course. Together with this yummy one can serve any complex or light side dish, starting from cereals, salads, mashed potatoes, sour cream, cream and ending with stewed vegetables, pasta cooked in tomato or cream sauce, although a slice of fresh bread and mayonnaise with ketchup are also suitable. The taste of the fish made in this way is more delicate and juicy, so cook with pleasure and enjoy homemade food!

Recipe Tips:

- mayonnaise in batter can be replaced with thick cream, sour cream or fermented milk yogurt without flavoring, and potato or corn starch flour;

- very often, before frying, the fish is pickled in a mixture of soy sauce, dried or fresh herbs and spicy spices: marjoram, lemon balm, mint, hyssop, basil, tarragon and others;

- to make the dish more tender, you can cook it on creamy fats;

- sometimes pieces of fish are first crushed in flour, then in batter and then in breadcrumbs, from which it acquires a more ruddy, crispy crust.
