Cooking meatloaf with vegetables:

Step 1: Prepare the pork.


To prepare this dish, we need only pork pulp, without bones and without cartilage. Excess fat must be cut off, as well as translucent films. After cleaning, rinse the pork under a stream of cool water and pat dry with paper towels.
Spread cling film on the kitchen board, and lay the meat on it, cover it with polyethylene on top of it. Important: if your piece of pork is thick, be sure to cut it along the fibers and open like a little book to make a whole meat layer. Lightly beat the pork pulp wrapped in a hammer to make it softer.

Step 2: Prepare the eggplant.


The first step is to prepare the eggplant. It must be thoroughly washed with running water, and then cut into strips or cubes, removing the ends on both sides. Place slices of this ingredient in a bowl of salt water and soak for 20 minutes. Then remove the eggplant, drain the liquid and dry it with disposable paper towels.

Step 3: Prepare the zucchini.


Rinse the zucchini well, cut the tail and the tip opposite to it, and remove the thick, inedible skin from the vegetable. Grind the component in the same way as the eggplant before, that is, into cubes or stripes, depending on what you selected earlier. Important: if the zucchini you have chosen is young and has not yet managed to get a thick skin, you can not clean it, but only rinse it.

Step 4: Prepare the carrots.


With a carrot, do the same as with other vegetables before that, that is, rinse, peel and cut into pieces convenient for you.

Step 5: Form the roll.


Sprinkle pork meat with spices, salt and dried herbs, hands spreading seasonings over the entire surface. Then put the sliced ​​vegetables in a piece in a random order, but in such a way that they are all evenly placed on top of the layer. Now roll the pork in your hands, the vegetables should be inside. Fasten the formed dish, bandaging it with kitchen thread, and then tightly wrap it in foil.

Step 6: Bake the meatloaf with vegetables.


Preheat the oven to 180 degrees Celsius. Place the meatloaf in a heat-resistant baking sheet, and as soon as the oven warms up to the desired temperature, send the pork and vegetables to bake on 1 hour 30 minutes or until fully prepared. As soon as the wound-up timer informs you that the time necessary for cooking has passed, remove the meatloaf from the oven and leave it to cool without opening the foil.

Step 7: Serve the meatloaf with vegetables.


Meatloaf with vegetables is served after it has completely cooled. It is, of course, removed from the foil, cut the kitchen thread and cut into thin slices. To this dish you can offer various side dishes, for example, mashed potatoes or boiled rice, as well as meatloaf stuffed with vegetables, poured with meat, garlic and cheese sauces, depending on your desire.
