Cooking yeast-free home-made bread:
Step 1: knead the yeast-free dough.
Sift the wheat flour into a deep, dry plate. But not all at once, but somewhere around 250-300 grams. Then pour sugar and salt into it. Thoroughly mix all these loose ingredients together.
In a separate cup at the same time, dilute the soda in kefir. Wait for the reaction to pass.
Now gradually pour the kefir with soda dissolved in it into the flour mixture. First, with a spatula, and then with your hands, knead the dough for yeast-free bread. At the same time, add wheat flour as necessary, so that as a result you get a fairly steep mass that easily holds its shape. It is best to continue kneading on the countertop, sprinkled with flour.
Roll the finished dough into a ball, return to a deep plate, cover with a kitchen towel so that it does not wind off, and let it rest for 25-35 minutes.
Step 2: bake yeast-free homemade bread.
While the future bread is resting, preheat the oven to 220-230 degrees Celsius. When the dough arrives, knead it again, roll it into a ball, flatten the tip a little, and make shallow cuts on it with a cross. They are needed so that the flesh is baked as well.
Place the bread blank on a baking sheet, sprinkle with a little flour and put in the oven. Moreover, through 15-20 minutes temperature must be reduced to 200 degrees, and the whole product must be baked for 35-50 minutes depending on the capabilities of your oven.
Check the readiness of the bread with a toothpick. You just need to stick it in the middle of the bun, if at the exit it turns out to be dry and without pieces of dough, then everything is ready, you can remove the baked goods from the oven.
After baking, the bread should be cooled at room temperature, covered with a clean kitchen towel. And if the crust is too dry, then the towel should be lightly moistened.
Step 3: serve homemade yeast-free bread.
Cut the prepared yeast-free home-made bread into pieces, spread with jam, butter, prepare sandwiches from it or eat just like that. I hope you enjoy it just as much as I do.
