Spicy zucchini caviar

Ingredients for making hot squash caviar

  1. Zucchini 3 pieces (large)

  4. Hot pepper 5 pieces
  5. Sugar 50 grams
  6. Salt to taste
  7. Tomato paste 3 tablespoons
  8. Vegetable oil 1.5 tablespoons

Saucepan, kitchen knife, cutting board, blender or meat grinder, ladle, wooden spoon, tablespoon, kitchen oven mitts, glass jars with lids, thin gloves.

Cooking spicy squash caviar:

Step 1: Prepare the zucchini.

Zucchini, that's where strong hands are most needed. After all, these vegetables have a rather thick skin, which must be carefully cut with a knife. Then, for convenience, each vegetable must be halved and cleaned of seeds and partitions. As a result, you get a clean zucchini flesh. Cut it into smaller pieces, and then grind it with a blender or mince.

Step 2: Prepare the onion.

Peel onions and rinse with cold water. Then divide each onion into small pieces and send to a blender or meat grinder, like the zucchini before.

Step 3: Prepare the carrots.

Be sure to rinse the carrots before peeling, then remove the skin from the root vegetables with a knife and wash the vegetables again after peeling. Grind the prepared carrots in the same way as onions with zucchini.

Step 4: Prepare the pepper.

Only use gloves with hot pepper. It must be cleaned, washed and crushed in the same way in a blender or rolled in a meat grinder. But for now, keep it away from other vegetables without mixing.

Step 5: Stew the vegetables.

Mix the gruel from the zucchini, carrots and onions and put on medium heat. Add salt, granulated sugar, pour in vegetable oil, mix and bring to a boil. Make a minimum heat and stir occasionally, simmer vegetables for 2 hours.
After two hours, add the tomato paste and chopped hot pepper to the total mass. Mix the squash caviar again, try the salt, suddenly it needs to be added, and then continue to simmer everything 2 hoursstirring occasionally.
Total vegetables need about 4 hours to the row.

Step 6: Harvest the zucchini caviar.

Pour zucchini caviar into heated sterilized jars, while it is always better to keep the pan with vegetables on fire, so that the mass does not cool. When you fill the jars, close them tightly with lids and set to cool at room temperature.
Ready and cooled spicy squash caviar can be stored in the same way as other preparations, that is, in a dark and slightly cool place. But before serving, it is better to slightly cool it by putting the jar with the workpiece not yet open in the refrigerator for a while.

Step 7: Serve the sharp zucchini caviar.

Spicy zucchini caviar is a snack, it must be served by spreading bread or making sandwiches with it. But what is there to explain, I think that everyone knows how and with what to eat vegetable caviar, and will do well without my explanation.

Recipe Tips:
