Pasta with eggplant and mushrooms


Ingredients for making pasta with eggplant and mushrooms.

  3. Mushrooms 250 grams
  4. Garlic 3 cloves
  5. Tomato paste 350 grams
  6. Water 500 milliliters
  7. Salt to taste

Cooking pasta with eggplant and mushrooms:

Step 1: stew the eggplant mushrooms.


Rinse and chop the eggplant. If you are not sure of its quality, then soak the vegetable in clean salted water, then rinse again and pat dry with paper towels. But in my opinion it is often unnecessary actions.
Mushrooms, in this case champignons are best suited, just wash and cut into thin slices.
Heat a small amount of oil in a pan, add 1 clove garlic, when it gives flavor, add the eggplant slices to it and simmer it all together over medium heat for 3-5 minutes. Salt. Add mushrooms and cook all together. 2-3 minuteswhile stirring.
Then remove the stewed mushrooms with eggplant from the pan and set them aside for now.

Step 2: Cook the Pasta


Pour pasta into a free skillet, fill it with water, add tomato paste, the remaining cloves of garlic and a little salt, and ground pepper. Put on high heat and, stirring all the time, bring to a boil. After that, it will be necessary to cover the frying pan, reduce the heat and cook everything until the pasta is cooked (the cooking time should be indicated on the package).

Step 3: combine the pasta with eggplant and mushrooms.


When the pasta is ready, add the eggplants and mushrooms stewed earlier to them in the pan, mix, sprinkle everything with fresh herbs, remove from heat and serve.

Step 4: serve the pasta with eggplant and mushrooms.
