Pangasius fillet with vegetables


Ingredients for cooking pangasius fillet with vegetables

  1. Pangasius fillet 1 piece (large)
  2. Onion 1 piece
  3. Lemon 1/2 pieces
  4. Carrot 1 piece (small)
  5. Zucchini 1 slice
  6. Salt to taste
  7. Coarse pepper to taste
  8. Sugar 1 pinch
  9. Butter 2 tablespoons
  10. Wheat flour 1 teaspoon
  11. Cream 1/3 cup
  12. 1/3 cup vegetable broth
  13. Dill 3 tablespoons
  14. Lovage 1 sprig (can be frozen or dried)

Inventory:

Double boiler, pan, kitchen knife, cutting board, toothpicks, baking bag, tablespoon, deep plate.

Cooking pangasius fillet with vegetables:

Step 1: marinate the fillet.

Defrost peeled fish and bone fillet. Rinse with cool water. Wipe.
Transfer the fillet to a deep plate or container, sprinkle with half onions and thin slices of lemon. Close and let the fish fillet stand at room temperature (if not very hot) for 30 minutes.

Step 2: turn the fillet into rolls.


While fillet is marinated, prepare carrots and zucchini by washing, peeling vegetables, and then chopping them into thin cubes.
Remove the fish fillet, discard the onion and lemon. Lay the pangasius meat on the table and cut it lengthwise into two equal parts. Salt, pepper.
Place slices of carrot and zucchini on one side of each half of the fillet.

Gently roll the fillet and secure the rolls with toothpicks. Then pack each in a film or sleeve for baking.

Step 3: cook the steamed pangasius fillet with vegetables.


Pour water into the lower pan of the double boiler and add a twig of lovage (in fact, you can use any other herb with a good aroma). Boil water over high heat.

Set the top pan, put the fish rolls and the remaining pieces of vegetables in it. Close the double boiler and cook everything for 15 minutes.

Step 4: prepare the sauce.


During the time while preparing the fillet and vegetables, you will have time to make the sauce.
Melt the butter over medium heat and add fresh finely chopped dill. Then fry the wheat flour in this mixture, mixing well all the time. After the same, without stopping mixing, pour in the broth and cream.

Stir everything well so that there are no flour lumps. Add salt and ground pepper, as well as sugar and a little lemon juice.
Cook until the sauce is thick enough for you.

Step 5: serve the pangasius fillet with vegetables.


Take out the finished fish rolls and free them from the film. Arrange them nicely on serving plates, and lay the vegetables next to them.

Pour the pangasius fillet with vegetables into a creamy sauce and serve until hot. As a side dish, boiled rice or potatoes is best suited (it can also be steamed).

- Instead of pangasius, you can take fillets of tilapia, cod and other similar fish.

- If you do not have a double boiler, you can figure it out from a colander / strainer and a large pan. In this case, the colander / strainer should not touch the water.
