Easter wicker with chocolate


Ingredients for Making Easter Braids with Chocolate

For the test

  1. Wheat flour 2 kilograms (plus 1 glass for kneading)
  2. Natural yogurt 750 grams
  3. Sugar 500 grams
  4. Milk 1 cup
  5. Fresh yeast 100 grams

  11. Milk chocolate 60 grams

  2. Honey 1 tablespoon

Cooking easter wicker with chocolate:

Step 1: knead the dough.


The most important rule when preparing the dough for this braid is that all ingredients, except those that we will heat, should be at room temperature, and not just from the refrigerator. Remember this.
First wipe the yeast with one tablespoon of sugar and leave on 10-15 minutest in a warm place.
Simmer the milk. Pour the flour into a bowl, mix it with salt. In the middle of a flour hill, make a small crater, pour hot milk into it, mix with a small amount of flour to make a paste. Then this paste must be added to the yeast with sugar, stir and leave on another 30-40 minutes. This is a dough for dough. Do not forget to cover it with a kitchen towel.

Like milk, heat yogurt to simmer warm.
After the yeast dough has risen, add it to the dough, and then pour warm yogurt, pour zest (orange and lemon), vanilla sugar, beaten egg yolks, melted butter and saffron. In general, all the other ingredients needed to make the dough.

Vigorously mix everything together, if necessary, add some more flour after.
As a result, you should get a soft, elastic and slightly sticky dough.
After all the ingredients are combined into a homogeneous mass, the dough must continue to knead 10 minutes. When cutting with a knife, the mass should bubble a little.

After kneading the dough properly, leave it in a warm place, covering it with a kitchen towel. The mass must rise. When the dough increases in volume, you can proceed to the next cooking step.

Step 2: prepare the toppings.


Divide the dough into four equal parts. Get two braids. Accordingly, for each braid you need two parts of the dough with different fillings.

For one of the fillings, it is enough to roll one part of the dough into a rectangle, and then scatter pieces of chocolate and candied fruit on top.

For the second filling, first beat the egg yolks to a thick foam. Then mix crushed nuts with sugar, cocoa, vanilla sugar, rum and raisins. Add the egg whites, mix, and then pour the warm milk until the mixture is similar in texture to a paste. Put the finished filling on the dough sheet.

Step 3: collect the easter wicker with chocolate.


Roll the dough with the filling into rolls, then fasten them with your fingers to each other on one side and bind them together.
Gently fold the wicker into a bread pan covered with baking parchment and let the dough come up. That's enough for the detuning of this braid 15 minutes.

Preheat the oven to 160-180 degrees (depends on your oven), grease the chocolate wickers with beaten eggs and send to bake on 50-60 minutes.
