Eggplant and Potato Salad

Ingredients for Making Eggplant and Potato Salad

  1. Eggplant 2-3 pieces (depending on size)
  2. Eggs 2 pieces
  3. Tomato 1-2 pieces (depending on size)
  4. Cilantro 1 cup
  5. Garlic 3 cloves
  6. Potato 1 piece (small)
  7. Cooking oil optional
  8. Salt to taste

Making eggplant and potato salad:

Step 1: fry the eggplant.

Beat the chicken eggs in a bowl.
Rinse the eggplants, dry and cut into circles.
Heat the oil in a frying pan, and then, reducing the heat to medium, dip the eggplants in the egg mixture, then put them in the pan. Roast approximately 1-2 minutes on each side, but it’s better to fry it well, the last thing you need is raw vegetables in the salad.
Put eggplant fried in an egg onto disposable paper towels immediately from the pan to remove excess fat.

Step 2: fry the potatoes.

The potato needs to be peeled, finely chopped and dried, and then fry in a large amount of oil until crisp. Immediately after frying the potatoes, as well as the eggplants, you need to give time to cool and rid them of excess oil.

Step 3: cut the eggplant.

Cut the cooked eggplant into thick strips. If you chop the vegetables very finely, they will fall apart in a salad, which is not at all good in this case.

Step 4: cut the tomatoes.

Rinse the tomatoes and cut them into strips, like eggplant, but thinner.

Step 5: cut the cilantro.

Rinse cilantro, shake off excess moisture and chop finely with a knife.

Step 6: mix the eggplant and potato salad.

Take a larger plate and combine in it all the previously prepared ingredients, add the last potatoes so that it does not have time to soak. Add salt, pepper and chopped garlic. Fine, but mix everything carefully. Serve immediately after cooking, while the potatoes are still crispy.

Step 7: serve eggplant and potato salad.

Eggplant and potato salad turns out to be very satisfying, so serve it as an independent dish, as well as a cold snack. The main thing is to make sure that there is enough salt, because eggplants require just a huge amount of it.
