Rhubarb and Strawberry Tart


Ingredients for Rhubarb and Strawberry Pie

Filling

  1. Rhubarb 500 grams
  2. Fresh strawberries 500 grams
  3. Sugar 50 grams

Dough

  1. Sugar 250 grams
  2. Self-raising flour (for baking muffins) 280 grams
  3. Potato starch 80 grams
  4. Baking margarine 250 grams
  5. 5 eggs
  6. Baking powder for dough 2 teaspoons
  7. Salt 1 pinch

Making rhubarb and strawberry pie:

Step 1: prepare the dough.


Mix the margarine softened at room temperature with 250 grams Sahara. Stir until you turn everything into a homogeneous cream, and then add the egg yolks here one at a time.
Separately, sift the sifted flour with a baking powder for the dough and salt, and then add this mixture to margarine with egg and sugar. Mix well.
Beat the remaining egg whites in a very thick foam, and then carefully mix the result into the dough. This will not be easy, since the mass does not want to absorb protein foam.

Step 2: prepare the filling.


Rinse the strawberries and rhubarb, remove the green ponytails from the berries, and peel the rhubarb. Cut everything into large pieces. If you have a small strawberry, then you can leave it whole.

Step 3: bake a pie of rhubarb and strawberries.


Preheat the oven to 175 degrees Celsius.
Lubricate the baking sheet with oil or cover it with parchment for baking and put on top 2/3 the whole test. Put in the oven on 12 minutes.
Attention: you need a fairly large baking sheet to make the cake thin.
Remove the slightly baked dough from the oven, put slices of rhubarb and strawberries on top of it, and then sprinkle them with sugar.

Put the rest of the dough on top of the filling, trying to distribute it as evenly as possible. And return the cake to the oven. Bake more 40 minutes, now ready to go.

After baking, let the rhubarb and strawberry pie rest a little at room temperature, and then divide it into portions of rectangular size and serve.

Step 4: serve the rhubarb and strawberry pie.


Before serving, you can sprinkle the cake with powdered sugar. Be sure to offer fragrant herbal or strong black tea without sugar for this baking. Great idea for a summer afternoon snack!
