Beetroot and Orange Salad

Ingredients for Salad with Beets and Orange

  1. Beets 4-5 pieces (small)
  2. Oranges 4 pieces
  3. Olive oil 1 tablespoon
  4. Fresh rosemary 1 sprig
  5. Honey 1 tablespoon
  6. Balsamic vinegar 1 teaspoon
  7. Toasted almonds 2 tablespoons
  8. Salt 1 pinch

Making a salad with beets and orange:

Step 1: prepare the ingredients.

Rinse the beets and cook it in a way convenient for you: cook or bake. I like baked more. First, wrap each of the beets in foil, and then send them all to a well-heated oven. Bake until vegetables are easily pierced with a knife.
Baked / boiled beets need to be peeled and cut into circles.

Rinse the oranges and cut the skin from them. Immediately set aside half of one orange and squeeze the juice out of it. Cut all other fruits into thin circles and carefully peel the seeds.

Cut off the leaves of a rosemary and chop them finely.

Crush the fried almonds with a knife into small pieces.

Step 2: mix the salad with beets and orange.

When all the ingredients are ready, mix separately freshly squeezed orange juice with olive oil, honey, vinegar, rosemary and salt.
On a salad bowl, beautifully lay the circles of orange and beets, interspersing them with each other. Pour over the sauce and sprinkle with almonds, then serve immediately.

Step 3: serve the salad with beets and orange.

Serve a salad with beets and orange immediately after cooking, otherwise it is better to wait with dressing and pour everything with a mixture of juice, vinegar and seasoned oil just before you start your meal. The finished dish has a bright taste, therefore it is better to enjoy it separately from everything.
