Ingredients for Making Pickled Mini Eggplant with Mint

  1. Eggplant mini 20 pieces
  2. Mint leaves 1 cup
  3. Garlic 1 head

Cooking pickled mini eggplant with mint:

Step 1: prepare the eggplant.


Rinse the eggplant thoroughly. Then take each vegetable and make an incision in it exactly in the middle.

Stuff the eggplant with salt, rubbing it well into the incision. Put the vegetables in a colander on 30 minutesso that bitter juice can drain from them. This procedure will remove the unpleasant aftertaste from the vegetables, and after pickling they will turn out to be very tasty.

Rinse the eggplant salt with cold water, and then send the vegetables to boil in boiling water for 10 minutes. Vegetables should become softer, but watch their preparation carefully, so as not to accidentally digest.

Step 2: stuff the eggplant.


After cooking, discard the eggplant in a colander, pour cold water and wait until all the liquid has drained.
At the same time, chop the mint leaves, and peel the garlic cloves and cut into thin slices.

Stuff the halves of boiled eggplant with a mixture of mint and garlic.

Step 3: pickle the eggplant.


Stuff the stuffed eggplants in a jar, filling it almost to the top.

Dissolve the vinegar in water, add a teaspoon of salt and pour the resulting marinade into a jar of eggplant. Close the vegetables and leave them to infuse in a dark place at room temperature on 2 days. Then pickled mini eggplant with mint can either be served on the table or put in the refrigerator for storage.
