Ingredients for making pepper paste for the winter

  6. Sugar (optional) 1-2 teaspoons

Cooking pepper paste for the winter:

Step 1: prepare the hot peppers.


Hot peppers need to be washed and cleaned from the tails and seeds from the core. Just cut each pepper in half so that it is convenient to take the insides out of it.

Work with hot peppers in gloves and a mask to protect your hands and respiratory tract from burns.

Step 2: prepare bell peppers.


Bell pepper must be baked over an open fire until the skin is blackened, then peeled and peeled seeds and green tails.
You can bake pepper in the oven if you do not have a gas stove. Also bake at high temperature until the skin is blackened. And do not forget to turn the vegetable in the process from side to side.

Step 3: prepare a paste of pepper.


Put prepared peppers in a pan, add water, tomato paste and salt. Put everything on a slow fire and cook until the peppers are soft.

Then you will need to grind everything with a submersible blender (just be careful and do not burn yourself with spray). And then keep boiling still for 30 minutesto get the sauce of the desired consistency.
At the end of cooking, try the paste and, if necessary, add more salt and / or sugar.

Step 4: we prepare a paste of pepper for the winter.


Paste the pepper paste immediately after cooking into hot sterilized jars, cover with lids and send the preparation for pasteurization in a pot of boiling water. Boil the jars for 20 minutesand then set them to cool.

Step 5: serve the pepper paste.


Pepper pasta can be served as a sauce for meat and vegetable dishes, with baked and boiled potatoes, for example, very tasty. And you can add pasta during the preparation of soups or stews. Although I believe that it will be good with everything: with pasta, with rice and just with bread too.
