Ingredients for preparing a salad of vegetables for the winter

  1. Bulgarian pepper 3.5 kilograms
  2. White cabbage 1.2 kilograms
  3. Red cabbage 1 kilogram
  4. Cauliflower 1 kg
  5. Carrot 1 kg
  6. Celery Root 300 grams
  7. Vinegar 9% 1 liter
  8. Vegetable oil 1/2 liter
  9. Sugar 500 grams
  10. Salt 4 tablespoons
  11. Pepper to taste

Preparation of vegetable salad for the winter:

Step 1: wash the vegetables.


First of all, you need to rinse the vegetables properly and peel the carrots and celery root, peppers from seeds and tails, white and red cabbage from dried leaves and stalks, and cauliflower from the stem.
In addition, cauliflower must be soaked in cold water for half an hour, and then let it drain.

Step 2: cut the pepper.


Rinse and peeled peppers, cut into thin strips, along or across - it does not matter.

Step 3: cut the white cabbage.


Slice white cabbage into thin strips.

Step 4: cut red cabbage.


Similarly, in thin stripes, chop and red cabbage.

Step 5: cut the cauliflower.


Cauliflower, after all the water drains from it, disassemble into inflorescences, and cut very large inflorescences with a knife.

Step 6: Three carrots and celery.


Peel the carrots and celery root on a medium grater.
Put all the vegetables in one large container.

Step 7: prepare the marinade.


Combine vinegar, oil, sugar and salt in a saucepan. Bring everything to a boil, making sure that salt and sugar have dissolved without sediment.

Step 8: mix the vegetable salad.


Stir all the vegetables together.

Pour the hot vegetable marinade into the vegetable salad and mix well.
Add pepper to taste.

Leave the salad to marinate on 24 hoursstirring it periodically.

Step 9: we prepare a salad of vegetables for the winter.


The next day, transfer the salad with the marinade into clean and sterilized jars and tightly close them with the same clean and sterile lids.
Store vegetable salad prepared for the winter in a dark and cool place.

Step 10: serve the vegetable salad.


Serve a vegetable salad with the advent of the first frosts. Appetizing and tasty looks like a blank on the table. Therefore, at lunch or at a holiday, this salad takes its place as a side dish or appetizer.
