Mini quiche with chanterelles and cheese

Cooking mini quiche with chanterelles and cheese:

Step 1: prepare the dough.


In a suitable bowl, mix wheat flour with lard and butter, adding salt, baking powder, and nutmeg. Knead thoroughly until the fat is combined with flour.

Add the chicken egg and continue cooking the dough until you have a smooth, smooth mass. Form it into a ball and put away to rest in the refrigerator on 30 minutes.

Step 2: bake the base.


Put the rest of the dough into small baking tins. Shape the edges.

Lightly pierce the quiche base with a fork over the entire area and place the dough in the oven, preheated to 200 degrees. Bake 10 minutesuntil the dough is browned.

Step 3: prepare the filling.


Peel the onion and garlic, finely chop them and pour them into a well-heated pan with olive oil. Season lightly with salt and pepper, fry until the onion is a little browned.

Then add peeled and washed chanterelles and fry them over high heat. Since mushrooms emit a lot of water, temperature is important, you should just fry the chanterelles, not stew them.
As soon as the chanterelles are browned, add finely chopped parsley and thyme. Shuffle. Remove from heat.

Step 4: fill the mini quiche with the filling.


Remove the hot stems from the dough and put the chanterelles fried with onions in them.
Halve the clean cherry tomatoes and put them in the molds after the mushrooms.

Sprinkle grated cheese on top, leaving a little to fill.

Step 5: prepare the fill.


In a bowl, mix the egg and cream, add a little smoked cheese, as well as salt and pepper. Beat well until smooth.

Step 6: bake a mini quiche with chanterelles and cheese.


Pour the cream with egg and cheese into the tins with the dough and filling, and then send everything to bake on 20 minutes, or until the pour is grasped, it will rise and almost brown.
