Cooking asparagus bean cutlets:

Step 1: clean the beans.

Rinse and filter the asparagus beans.

Rinse the pods well and cut off the tips, if your beans are very long, you can cut it into several parts.

Step 2: cook the beans.

Boil the water over medium heat, salt and dip the bean pods into it. Cover and cook for 15 minutes.

Drain the water from the boiled beans, cool the pods and cut them into small pieces, about a thickness of about 5 millimeters everyone.

Step 3: mix the beans with the rest of the ingredients.

Add chopped leek and green onion to the chopped beans. Beat the chicken eggs.

Add spices for a more spicy taste and a few drops of lemon juice. Shuffle.

Add more breadcrumbs and mix everything very carefully again.

You will get a fairly liquid mass, we will form cutlets from it right in the pan.

Step 4: fry the asparagus bean patties.

Heat the pan and the vegetable oil in it properly, and then put the cutlet mass in a tablespoon.

Place the cutlets at a certain distance from each other so that they do not stick together during the process.

Once the items are browned on one side, turn them over and continue cooking.

Ready cutlets are covered with a golden brown on both sides.

As soon as you notice that everything is well cooked, remove the asparagus bean patties from the pan and transfer them to paper towels to remove excess fat.
About 15 vegetable cutlets come out of the indicated amount of ingredients.

Step 5: serve the asparagus bean cutlets.

Serve the asparagus bean cutlets hot, to a crispy cabbage salad or to baked potatoes, for example. As a sauce, both ordinary tomato and oily sour cream are suitable. Add all this to the patties to make a delicious and satisfying meal.
Enjoy your meal!
