Ingredients for Making Fresh Mushroom Soup Mushroom
- White mushrooms 500 grams
- Chanterelles 200 grams
- Other forest mushrooms (to taste) a few pieces
- Butter 2 tablespoons
- Onion 1/2 large onion
- Wheat flour 1 tablespoon
- Vegetable broth or just water 1.5 liters
- Fat sour cream 3-4 tablespoons
- Salt to taste
- Pepper to taste

Making mushroom soup with fresh mushrooms:
Step 1: prepare the mushrooms.
Clean and rinse fresh mushrooms as you are used to, cleaning them from twigs, needles and other plant debris.
Cut large mushrooms into beautiful large cubes or slices, leave the small ones whole. So your soup will look very colorful and beautiful on a plate.
Step 2: fry the mushrooms.
Melt the butter in a pan. Make sure it is of good quality and not burning.
Throw in a very finely chopped half of the onion and all the mushrooms except chanterelles.
Stew everything, stirring, about 3 minutes over low heat.
Now add the chanterelles, salt to taste, pepper and simmer all together for a few more minutes.
Step 3: add the flour.
When there is a lot of liquid released from the mushrooms in the pan, add the wheat flour and continue cooking, stirring occasionally. Flour should play as a thickener for mushroom sauce.
Step 4: pour the broth.
Warm the vegetable broth or water in a pan (but with water it’s not so rich, of course) and pour mushrooms fried with flour there.
Continue to boil the soup after boiling. 25 minutes over low heat.
Step 5: add the sour cream.
Dilute a few tablespoons of thick fat sour cream (it is better to take homemade or farm) in a hot mushroom broth. Mix well and pour into mushroom soup.
As soon as you add sour cream to the soup, remove it from the heat and cover it with a lid and let it brew for a minute. And then serve the mushroom soup to the table!
Step 6: serve fresh mushroom soup.
Mushroom soup can be served simply with fresh herbs, or you can pour it on a plate with prepared pasta. It turns out tasty, just can not describe how! And the aroma of forest mushrooms will call everyone to the table even before the soup is ready to serve.
