Stuffed Squash

Stuffed Squash Ingredients

  1. Squash (medium size with soft skin) 2 pieces
  2. Tomato paste 2 tablespoons
  3. Onion 1 piece
  4. Vegetable oil 2 tablespoons
  5. Ground beef (can be mixed with chicken) 300 grams
  6. Eggs 2 pieces
  7. Cheese 200 grams
  8. Salt to taste
  9. Sage 1/2 teaspoon
  10. Tarragon 1/2 teaspoon

Cooking Stuffed Squash:

Step 1: prepare the squash.

Peel the onion and chop it into small cubes.
Defrost minced meat at room temperature.
Rinse the squash properly.

Cut the cap from the squash (this is the one with the tail), exposing the flesh. For stability, you can also cut the bottom slightly so that the vegetables do not sway.
With a tablespoon or ice cream spoon, for example, remove the core seeds from the squash, making room for the filling.

Step 2: prepare the filling.

Fry the onions until tender in a pan with warmed vegetable oil.
Add ground beef to the onion (for softness you can mix it with minced chicken), tomato paste, salt and sage with tarragon for flavor.
Stirring simmer all together about 5 minutes, that is, not for long, but so that the aromas of herbs have time to become brighter.

Step 3: stuff the squash.

Fill the prepared squash with minced meat with tomato paste and onion and break each chicken into each vegetable.

Grate the cheese on top. And do not spare the cheese, it is better to have more cheese, it turns out tastier.
Close the squash on top of the lids so that the juices remain inside.

Step 4: bake stuffed squash.

Stuffed stuffed squash need to bake about 30-50 minutes in preheated to 180 degrees the oven. The exact cooking temperature depends on the size of your vegetables, so just check them with a toothpick. When the squash becomes soft, they can be taken out of the oven and served.

Ready stuffed squash must be served hot, as soon as you take them out of the oven.

Step 5: serve the stuffed squash.

When serving, you can season the squash with minced sour cream and fresh herbs.

Squash is cut into several parts and served only with sauce, I do not think that they need any kind of side dish. Everything is very tasty and aromatic anyway.
