Fish in yeast dough


Ingredients for Cooking Fish in Yeast Dough

  1. Wheat flour 500 grams
  2. Milk 200 milliliters
  3. Butter 100 grams (per dough) + 2 tablespoons (for frying)
  4. Fresh yeast 25 grams
  5. Egg 2 pieces (1 - in the dough, 1 - for lubrication)
  6. Sugar 1 teaspoon
  7. Salt 1 teaspoon (in the dough + a pinch in the filling)
  8. Champignons 500 grams
  9. Onion 1 piece
  10. 2 cloves of garlic
  11. Cod fillet 500 grams
  12. Parsley 2 tablespoons
  13. Ground pepper 1 pinch
  14. Provencal herbs 1 teaspoon
  15. Seasoning for fish 1/2 tablespoon
  16. Gouda cheese 200 grams
  • Main ingredients: Cod, Onion, Garlic, Mushrooms, Cheese, Yeast Dough

Inventory:

Baking tray, baking parchment, rolling pin, spatula, frying pan, grater, kitchen knife, cutting board, plate, tablespoon.

Cooking fish in yeast dough:

Step 1: prepare the dough.


Dissolve fresh yeast in warm milk, then add melted (but not hot!) Butter and mix well again.
Then gradually add the sifted wheat flour, salt, sugar and one egg. Knead a smooth, uniform and elastic dough.
Cover the dough with a kitchen towel and set it aside to give the yeast time. Keep everything on 1 hour in a warm place, then the mass should rise well.

Step 2: fry the mushrooms.


And while the dough rises, prepare the filling. Wash the mushrooms, peel, cut into small pieces and fry in butter until tender. Add salt and pepper at the end to taste.

Step 3: fry the onions and garlic.


Peel the onion and garlic, finely chop and fry in butter in a separate frying pan until transparent.
Then combine the fried mushrooms with onions and garlic. Allow the mixture to cool at room temperature.

Step 4: make a cake.


Divide the matched dough in half. Roll one piece directly onto a baking sheet covered with paper. Roll and shape the fish, cutting out the trunk and tail. Save the crop.
The first layer of the filling is fried mushrooms with onions and garlic. Put them in the middle of your fish’s body.

Then take the cod fillet, grate it with salt, pepper (white, preferably) and seasonings for fish. Lay the fish on top of the mushrooms.

And the last layer is gouda cheese grated on medium or large grater.

Now take the second part of the dough, roll / stretch it to the shape of your cake and lay it on top. Use cropping to make the eyes, fins and mouth. At the edges, press the seams with a fork, and the scales can be made with scissors.

Step 5: bake the fish in a yeast dough.


Lubricate the top of the pie with a beaten egg (add some milk here if you want) and send the fish in the dough to be baked in preheated 200 degrees the oven. At high temperature, bake everything for 15 minutesthen reduce the oven to 180 degrees and cook the pie yet 45 minutes.

Cooked fish in yeast dough can be served hot or cold, not lunch, dinner or afternoon tea.
