Cooking pies with sauerkraut and mushrooms:
Step 1: prepare the mushrooms.
Start cooking the pies by preparing the ingredients for the topping. Rinse dried mushrooms first and soak them in water for one night.
Then change the water and cook the mushrooms for 20 minutes after boiling.
Dry the prepared mushrooms, keeping the broth from under them, and then cut into small pieces.
Step 2: fry the onions.
Cut the onion into small cubes and fry it in vegetable oil (2 tablespoons) until golden brown. Remove from heat and cool.
Step 3: prepare the cabbage.
If sauerkraut is very acidic, it must be washed. In any case, the cabbage needs to be squeezed and cut into smaller ones.
Stew the cabbage in the mushroom broth (initially pour about 1 cup) Add bay leaf and allspice. Cook over medium or low heat for 1 hour, all liquid should evaporate.
Squeeze the cabbage from moisture, cool and add to the mushrooms and onions. Season to taste with salt and pepper.
Step 4: knead the dough.
Sift the wheat flour, add yeast, warm (but not hot) milk, eggs, butter, salt and sugar to it. Start kneading with a spoon.
Transfer the soft dough to a flour-sprinkled worktop and continue to knead until the mass is smooth. But don't make the dough really cool by adding more flour.
Put the dough in a warm place, covering it with a kitchen towel. Let the mass double in volume. When this happens, take out the dough and divide it into 4 equal parts.
Step 5: we make pies with sauerkraut and mushrooms.
Roll each piece of dough into a strip, about 22 centimeters.
Put the filling in the center of each strip of dough.
Bring the edges of the dough together and fasten them together with your fingers, and then go with the tip of a knife or fork to make a beautiful edging.
