Ingredients for salmon and zucchini skewers
- Salmon Fillet 300 grams
- Zucchini 2 pieces (small)
- Bulgarian red pepper 1/2 pieces
- Cherry Tomatoes 15 pieces
- Pepper mixture (ground) to taste
- Salt to taste
- Provencal herbs to taste
- Lemon juice to taste
- Olive oil optional
- Red onion 1 piece

Grill pan, kitchen knife, cutting board, knife for cutting vegetables, tongs or spatula, wooden skewers.
Cooking salmon and zucchini skewers:
Step 1: pickle salmon.
Remove the salmon fillet from the skin gently and cut it into medium-sized cubes, each centimeter.
Pour the fish with lemon juice, pepper and salt. Mix well and until marinated somewhere nearby, at room temperature.
Step 2: prepare the zucchini.
Rinse and dry the zucchini, and then cut them with a special knife (some others use it to peel vegetables) into thin and long slices.
Sprinkle zucchini stripes with Provencal herbs, salt and pepper, and then pour olive oil on top.
Step 3: prepare the pepper and tomato.
Wash and dry the cherry tomatoes, and cut the pepper into cubes, almost the same size as the pieces of salmon.
Step 4: string everything onto skewers.
Wrap the fish fillet cubes in thin slices of zucchini to make small rolls.
Soak wooden skewers in cold water.
Put the zucchini rolls with fish on skewers, alternating them with tomatoes and slices of bell pepper.
Step 5: fry salmon and zucchini skewers.
In a grill pan, heat a small amount of vegetable oil and lay red onion sliced in large pieces. Next, put the skewers with salmon and zucchini.
Fry everything, periodically turning, until soft and golden crust. Salmon cooks quickly, so long-term frying is useless for him, especially when the fish is cut into such small pieces.
Step 6: serve salmon and zucchini kebabs.
Serving kebabs of salmon and zucchini is better hot, immediately after cooking, but after cooling, they remain very tasty. You can also offer them a sauce of fat sour cream with herbs. Very beautiful, bright and tasty dish.
