Liver and Rice Salad


Ingredients for Cooking Salad with Liver and Rice

For salad

For mayonnaise

  1. Yolks 3 pieces
  2. Vegetable oil 150 milliliters
  3. Lemon juice 30 milliliters
  4. Mustard to taste
  5. Sugar 1 teaspoon
  6. Salt 1 pinch

Cooking salad with liver and rice:

Step 1: prepare the liver.


Scalp the liver with boiling water, and then immediately dip it into cold water. After you will be able to easily clean the liver from the films. Soak the liver in milk on 1 hour.
After such preparation, cut the liver into thin slices, salt it and roll in wheat flour.

Heat the oil in a pan. Dip the liver in a pan and fry it 30 seconds over high heat. Then flip and fry the pieces over 1.5-2 minutes from each side.
The oil must be very hot so that a crust forms on the liver, able to preserve the juiciness of the pieces. A liver cooked in this way will not taste dry.
Continue cooking over medium heat until the juice inside the liver is clear (pierce one slice to find out for sure).

Dry the fried liver from the butter by patting it with a paper towel.
Allow the liver to cool, and then rub it.

Step 2: prepare the rice.


Simultaneously with the preparation of the liver, cook rice and then pour it over with cold water and leave to dry.

Step 3: prepare the corn.


Drain the excess fluid from the corn.

Step 4: prepare the eggs.


Hard-boiled eggs, peel the eggs, separate the yolks from the proteins and grate everything without mixing.

Step 5: prepare the cheese.


Cheese also needs to be grated.

Step 6: make mayonnaise.


Combine the yolks, salt, sugar and mustard in a plate. Whisk everything with a whisk very well. Whisk for 1 minutes.

Add lemon juice and continue whisking.

Do not stop vigorously stirring mayonnaise, pour vegetable oil into it with a thin stream. And continue to mix until the dressing becomes the desired density and consistency.
The mayonnaise prepared according to this recipe turns out to be more airy and is better suited for soaking our puff salad.

Step 7: collect the salad with liver and rice.


Now you just have to arrange the layers in the following sequence: beef liver, rice, corn, cheese, egg white and yolk. At the same time, layers from the liver, rice and cheese should be greased with mayonnaise.
Let the liver and rice salad brew in the refrigerator for 2-3 hours, and can be served.

Step 8: serve the salad with liver and rice.
