Ingredients for making rumen soup
- Beef tripe (boiled) 1 kilogram
- Onion 1 piece (large)
- 2 carrots
- Garlic 1 head
- Pickled peppers 1-2 pieces
- Vinegar to taste
- Celery root 1 piece (small)
- Parsnip 1 piece
- Sour cream 250 grams
- 4 egg yolks
- Salt to taste

Making rumen soup:
Step 1: prepare the ingredients.
Vegetables and scar must be peeled. One carrot needs to be grated, leave the second for the broth.
Put the broth to cook, adding one carrot, onion, parsnip and celery root to it.
Cut the scar into thin strips and send it to the broth as well.
Cook everything over medium heat for about 30 minutesso that the vegetables give their taste.
You can add a little beef to make a broth with a pronounced meat flavor. It was necessary to do without meat.
Step 2: Cook the roast.
The remaining carrots, the one that you grated, fry in vegetable oil over medium heat until golden brown.
Remove the vegetables dipped there from the prepared broth, and instead of them add the fried carrots and mix.
Step 3: cook the rumen soup.
Beat the yolks with sour cream until smooth, add some hot broth and mix very carefully, and add the resulting mixture to the soup in a thin stream.
And immediately add the chopped pickled peppers and garlic, chopped and mixed with salt. Add vinegar to your taste and the rumen soup is ready! Remove it from the heat and serve hot.
You can also add ground black pepper and vary the amount of garlic depending on what taste you want to get.
Step 4: serve the rumen soup.
Serve the rumen soup hot, in the bite with hot pepper (can be pickled) it turns out just lick your fingers! A very simple, ordinary and at the same time original dish.
