Braised Chicken with Mushrooms and Olives


Ingredients for cooking stewed chicken with mushrooms and olives

  1. Young chicken 1 piece (about 800 grams)
  2. Onion 1 piece
  3. Sweet green pepper 1 piece
  4. Sweet red pepper 1 piece
  5. 4 cloves of garlic
  6. Champignons 7-8 pieces

  8. Tomato paste 300 grams
  9. Tomatoes 2 pieces

Cooking stewed chicken with mushrooms and olives:

Step 1: prepare the ingredients.


Rinse the chicken, dry and cut into portions. Do not leave the legs and wings whole, divide them into several parts, cutting the joints.

Peel and rinse the vegetables and mushrooms, and then cut them into small, but arbitrary sized pieces. Only onions and garlic need to be chopped very finely.

Step 2: fry the chicken.


Season the chicken with salt, pepper and paprika.
Heat two tablespoons of olive oil in a saucepan and put in it slices of spicy chicken with bay leaves.

Sauté the chicken until golden brown on all sides. Do not hold for long, we just need to achieve the appearance of a crust.

Step 3: stew the chicken with mushrooms and olives.


Add vegetables, mushrooms, greens and olives to the chicken (you don’t need to cut them, put them whole), cover with tomato paste diluted in such an amount of water that it completely covers the entire contents of the pan.
Cover and simmer over low heat for 90-120 minutesturning over pieces of chicken from time to time.
During this time, the sauce should partially evaporate, vegetables and mushrooms should be cooked, and the chicken should become soft and boiled.

Toward the end of cooking, dissolve a spoonful of starch in a small glass of water, and then add to the chicken pan. Stir to thicken the sauce and boil.
Check for taste, add spices and, if the sauce is acidic, a little sugar. Stir everything well, remove from heat, decorate with fresh herbs and serve.

Step 4: serve the stewed chicken with mushrooms and olives.


Serve the stewed chicken with mushrooms and olives as the main hot dish. Add to it a side dish of pasta, potatoes or polenta. It will turn out an incredibly tasty dish.
